I found this tremendous, refreshing recipe for the summer and good health!

Ingredients: For the Grilled Salmon:

4 salmon fillets (6 ounces each)
2 tablespoons olive oil

2 tablespoons lemon juice

2 garlic cloves, minced

Salt and pepper to taste

Fresh dill or parsley for garnish (optional)

For the Quinoa Salad:

1 cup quinoa

2 cups water or low-sodium vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley or cilantro, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Instructions:

Grilled Salmon:

Marinate the Salmon: In a small bowl, mix olive oil, lemon juice, minced garlic, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.

Grill the Salmon: Preheat your grill to medium-high heat. Grill the salmon fillets skin-side down for about 4-6 minutes per side or until the salmon is cooked through and flakes easily with a fork. Garnish with fresh dill or parsley, if desired.

Quinoa Salad:

Cook the Quinoa: Rinse the quinoa under cold water. Bring 2 cups of water or vegetable broth to a boil in a medium saucepan. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed. Fluff with a fork and let it cool.
